Gelatin & Collagen - Your new best friend!


Gelatin makes up 25-35% of the human body. We need this stuff!



  1. Liver Detox - Gelatin & Collagen are rich in glycine, which can be considered a conditionally essential amino acid. The human body needs a great deal of glycine for detoxification from exposure to chemicals in our toxic environment. 

  2. Weight loss -  Gelatin & Collagen arefull of protein, which the sense of satiety and promotes eating higher quality foods. Gelatin can help with liver detox which will boost fat burning ability.

  3. Cellulite - Cellulite is caused by a breakdown of collagen, which can be exacerbated by nutritional deficiencies.  It is also anti-estrogenic and may help balance hormones and break down fat that causes cellulite. 

  4. Gut Health – Gelatin & Collagen are one of the best foods for gut health. It helps to fill holes and damaged areas (leaky gut) of the stomach lining and gut, and reduces inflammation. Gelatin & Collagen increase the amount of gastric acid in the gut, which is needed to breakdown and digest protein.

NOTE: All coconut milks used are unsweetened variety.

Panna Cotta & Strawberries



3 Tablesp Vital Proteins gelatin protein 

4 cup coconut milk, (Silk, SO Delicious, Trader Joe's USA, Vitasoy brand AUS)

3 tea bags Bengal spice chai tea

2-3 Tablesp Perfect sweet (xylitol)

1 teasp vanilla 

3 cups berries



  1. Place 1 cup coconut milk in a small bowl and add the gelatin to it. Stir to combine and set is aside.

  2. Heat a medium sized heavy saucepan over medium heat, add other 3 cups coconut milk, xylitol and vanilla. Whisk until the xylitol is dissolved.

  3. Add the tea bags and simmer at a low heat for 10 minutes. Make sure the mixture does not come to a boil. Remove the tea ball or the tea bags and discard.

  4. Add the milk and gelatin mixture to the saucepan and vigorously whisk until well combined and the gelatin has dissolved. Again, taking care to not bring the mixture to a boil.

  5. Remove the mixture from the heat and pour it evenly into individual serving glasses. Allow it to sit on the counter top to cool slightly.

  6. Refrigerate until set, 6 to 8 hours.

  7. Top with berrries on each


Serves 3 - each serve 1P1C1F

Dark Chocolate Coconut Pudding 

2 cups full-fat coconut milk (Silk, SO Delicious, Trader Joe's USA, Vitasoy brand AUS)

2 Tablesp unsweetened cocoa or cacao

2 Tablesp Vital Proteins gelatin protein 

½ tsp vanilla extract



  1. Heat the coconut milk on medium-low in a heavy-bottomed pot. You want to warm it enough to dissolve the gelatin but not boil. Add the chocolate and whisk constantly until it combines.

  2. Whisk in the gelatin by slowly pouring as you whisk. If you just dump the whole tablespoon in, it'll get clumpy.

  3. Turn off the heat and whisk in the vanilla extract.

  4. Pour into your desired glasses or cups and chill for at least 2 hours or until set.


Serves 2 - each serve 1P1C1F

Protein Pear Pudding



6 ripe pears

6 Tablesp Vital Proteins gelatin protein

2 Tablesp xylitol or monk fruit

1.5 Tablesp coconut oil

1 1/2 cup water

12 drops of stevia (optional)

Cumin, cinnamon, cloves to taste (optional)



  • Wash and cube pears.

  • Put in sauce pan and with 1/2 cup of filtered water, xylitol/monk fruit, stevia and spices.

  • Cook on medium heat covered for 10-15 minutes or until pears are soft.

  • Puree with immersion blender or food processor.

  • Return or keep pear mixture in sauce pan on lowest heat.

  • Take 1 cup of cold water, mix in gelatin and blend evenly. (Move quickly so gelatin doesn’t set.)

  • Pour gelatin mixture into sauce pan with pears.

  • Stir continually until gelatin is fully dissolved into pear mixture. May need to turn up heat to medium.

  • Add in your fat. Let it melt and blend evenly.

  • Once completed, turn off heat and let mixture slightly cool.

  • Pour into 1 cup mason jars and close with lid.

  • Put in refrigerator for several hours till they set. Set it out for 15 minutes before eating so mixture softens a bit.


Makes 6. Each serve - 2P2C2F.

Berry Gelatin Smoothie


1 Tablesp water
1/8 avocado 
2 Tablesp Vital Proteins Collagen protein
1 cup coconut milk 
1 teaspoon xylitol or monk fruit
2 cup frozen mixed berries



  1. Blend the water, avocado, gelatin, coconut milk and xylitol or monk fruit.

  2. Once this is well blended, add half the berries and blend until smooth.

  3. Eat 1 cup berries or 1C of other fruit on the side to slow down rate of digestion and sustain blood sugar levels.


Makes 1 - 2P 2C 2F

Fruit snacks


4 cups strawberries
1/2 cup lemon juice
4 Tablesp xylitol or monk fruit
1/4 teasp salt
1/2 teasp vanilla
6 Tablesp Vital Proteins gelatin protein 



  1. In a saucepan, heat strawberries and mash while cooking.

  2. Once all mashed, add lemon juice, xylitol/monk fruit, salt & vanilla.

  3. Slowly add the gelatin so it doesn’t clump.  

  4. Cook an additional 2 minutes then pour into a glass pan and set in the fridge for 30 minutes.

  5. Use a pizza cutter, or a shaped cuter.


Total = 6P 6C.


Great for taking in the car or for afternoon snacks. Just add fat eg. nuts. 

Coconut Gelatin pancakes


¼ cup coconut flour

1 Tablesp Vital Proteins gelatin protein

4 eggs, at room temperature

1 teasp softened butter or coconut oil

½ cup coconut milk (Silk, SO Delicious, Trader Joe's USA, Vitasoy brand AUS)

Water as needed for batter

Oil spray, for the pan



  1. Start heating skillet over medium heat.

  2. Whisk together the coconut flour and gelatin. Stir in the eggs, beating until a smooth paste forms.

  3. Stir in the butter/coconut oil until combined, then add the coconut milk and any water to correct consistency.

  4. Cook the pancakes in the hot skillet with oil spray. Cook until the edges and center starts to look opaque, then flip. Smaller pancakes will be easier to flip.


Serves 2 of ~ 12 small pancakes - each serve 2P2F serve with 2C fruit.

Coconut Blueberry 'Oatmeal'


1 cup coconut milk (Silk, SO Delicious, Trader Joe's USA, Vitasoy brand AUS)

1 ripe banana, broken into pieces 

1/4 cup coconut cream

1 teasp vanilla extract

pinch sea salt


4 Tablesp Vital Protein gelatin protein

1 cup fresh blueberries



  1. Place a medium pot on the stove on medium heat.

  2. Add the coconut milk, bananas, coconut cream, vanilla extract and sea salt to the pot.

  3. Bring to a boil.

  4. Turn down the heat and simmer for 10 minutes, stirring every couple minutes to break up the banana pieces.

  5. Add the gelatin and stir well to dissolve.

  6. Add the blueberries and cook for another 2-3 minutes. 

  7. Remove from heat and let sit for approximately 5 minutes. Add cinnamon, nutmeg or all spice if desired.  


Makes 2 serves = 2P 2C 2F



Apple Pie Pudding 


3 apples, peeled, cored & diced

1 teasp coconut oil

2 Tablesp xylitol or monk fruit

Squeeze of fresh lemon juice

3 teasp cinnamon, divided

3 Tablesp water, divided

More water to correct consistency if needed

1 cup coconut milk (Silk, SO Delicious, Trader Joe's USA, Vitasoy brand AUS)

1/4 avocado

6 Tablesp Vital Proteins gelatin protein 



  1. Add the apples, coconut oil, xylitol/monk fruit, lemon juice and 1 tsp of the cinnamon to a saucepan. Stir to coat the apples evenly.

  2. Cover the saucepan with a lid and over a medium-high heat, simmer for about 15 minutes, until the apples softened slightly.

  3. Remove the pan from the heat and add a splash of water, about 1 Tablesp, to the pan to loosen and scrape up the caramelized juices from the pan. Stir everything through and then add the apple mixture to a blender.

  4. Add the coconut milk, avocado and remaining 2 teasp of cinnamon to the apple mixture. Blend until smooth.

  5. In a small jug or bowl, sprinkle gelatin.

  6. Add 2 Tablesp of room temperature water to the gelatin; whisk with a fork until you have a paste.

  7. Add the gelatin paste to the blender and process until smooth.

  8. Divide the pudding between 3 dishes or glasses. Use a funnel to avoid spills!

  9. Refrigerate for at least an hour before serving.
