Pork Egg Roll in a Bowl

2/3 Tablesp sesame oil 

3 cloves garlic, minced

1/2 cup onion, diced

5 green onions, sliced on a bias 1 lb/450g ground pork

1/2 teasp ground ginger

sea salt and black pepper

1 Tablesp Sriracha

14 oz/400g bag coleslaw

3 Tablesp Coconut Aminos or soy sauce

1 Tablesp Rice Wine Vinegar 

2 Tablesp toasted sesame seeds

DIRECTIONS:

  1. Heat sesame oil in a large skillet over medium high heat.

  2. Add the garlic, onion, and white portion of the green onions. Sauté.

  3. Add the ground pork, ground ginger, sea salt, black pepper and Sriracha. Sauté until the pork is cooked through.

  4. Add the coleslaw mix, coconut aminos, and rice wine vinegar. Sauté until the coleslaw is tender.

  5. Top with green onions and sesame seeds before serving.

Black pepper chicken stir fry
  • 1 tbsp Sesame oil

  • 8 oz chicken breast

  • 3 cups Broccoli florets

  • 1.5 cups cauliflower florets

  • 3 Celery Sticks

  • 1 large Onion

  • 1 large Red Pepper

  • 1 Green Pepper

Sauce

  • 1/2 cup Oyster sauce

  • 1 tsp Corn starch

  • 1/4 cup Water

  • 3 tsp black pepper

  • 2 tsp Medium Soya sauce

  • 1 tbsp Rice vinegar

  • 4 cloves Garlic

  • 1 tbsp Fresh Ginger Root

  • to taste Salt

DIRECTIONS:

  1. Start by making the sauce. Add all the sauce ingredients to a small bowl and whisk together, then set aside.

  2. Then wash and chop all your vegetables and set aside.

  3. In a frying pan/work add 1 cup of water then all the vegetables, broccoli first and stir fry over medium heat for roughly 3 minutes till the vegetables are tender yet crisp. Remove the veggies strain and set aside!

  4. Then in the same frying pan/work add 1 tbsp of sesame oil and cook the diced chicken over medium heat till no longer pink. Then add in the sliced onion and saute one more minute before adding in the sauce. 

  5. Mix everything together then add in the steamed veggies, 1/4 cup of water and season with salt and pepper to taste.  

MAKES 4 serves. Each serve = 2P2C2F

Chicken and cabbage stir fry
  • 1 tsp olive oil

  • 1 medium Onion

  • 2 cloves Garlic

  • 1/2 head Green Cabbage

  • 8 oz chicken breasts 

  • 1/2 Jalapeno Pepper, finely diced

  • 1 Orange Pepper, diced

  • 1/2 cup of Chicken Stock

  • 2 tbsp of Oyster sauce

  • 1 tbsp of soy sauce

  • Pinch of Salt and Pepper to taste

DIRECTIONS:

  1. In a large skillet add 1 tbsp of butter then add the diced chicken breasts once browned remove from the heat then add in the chopped cabbage and onion.

  2. Saute till soft then turn down the heat and add the minced garlic and saute one minute before adding in the chopped orange pepper.

  3. Toss back in the cooked chicken, chicken stock, oyster and soy sauce and saute on low - medium heat all together for 15 minutes, string often.

  4. Serve and enjoy!
