

Superseed Chocolate Protein Bars - No Bake
1 teasp solid coconut oil
2 Tablesp maple syrup
2 Tablesp almond milk
1/3 cup dark chocolate
1/2 teasp vanilla extract
pinch of salt
1 Tablesp pumpkin
1 Tablesp chia seeds
1 Tablesp flax seeds
1 Tbsp Hemp seeds or sesame seeds
6 Tablesp vegan protein powder
Water as needed to get consistency right
Variations - cinnamon, ginger, cloves, chilli
DIRECTIONS:

In pan, heat coconut oil, maple and almond milk. Switch off heat once it starts to bubble.

Add chocolate and mix.

Let sit for 2 mins and then whisk until melted and smooth.

Add vanilla and salt and mix in.

Pulse seeds (pumpkin, chia, flax and hemp) in blender to make a course meal.

Add portein powder and mix.

Spread on parchment using a spatula.

Chill until set. Will keep in refrigerator for several weeks.
