Superseed Chocolate Protein Bars - No Bake

 

1 teasp solid coconut oil

2 Tablesp maple syrup

2 Tablesp almond milk

1/3 cup dark chocolate

1/2 teasp vanilla extract

pinch of salt

1 Tablesp pumpkin

1 Tablesp chia seeds

1 Tablesp flax seeds

1 Tbsp Hemp seeds or sesame seeds

6 Tablesp vegan protein powder

Water as needed to get consistency right

 

Variations - cinnamon, ginger, cloves, chilli

 

DIRECTIONS:

  1. In pan, heat coconut oil, maple and almond milk. Switch off heat once it starts to bubble. 

  2. Add chocolate and mix. 

  3. Let sit for 2 mins and then whisk until melted and smooth. 

  4. Add vanilla and salt and mix in.

  5. Pulse seeds (pumpkin, chia, flax and hemp) in blender to make a course meal. 

  6. Add portein powder and mix.

  7. Spread on parchment using a spatula. 

  8. Chill until set. Will keep in refrigerator for several weeks. 

 

Makes 8. Each bar = 1P, 1C, 1F.
