Zucchini Brownie


1/2 cup almond butter

1 1/2 cup grated zucchini

1/3 cup raw honey or agave

1 cup plant based or collagen protein

2 eggs

1 tsp vanilla

1 tsp baking soda

1 tsp cinnamon

1/2 tsp nutmeg

1/2 tsp all spice

8 squares of Lindt 85% dark chocolate (chopped)

Water as needed for consistency



  1. Preheat oven to 350F/180C.

  2. Combine all ingredients in large bowl.

  3. Pour into greased 9" x 9" baking pan

  4. Bake 25-30 mins or until a toothpick comes out clean (possibly 1 hour depending on your oven).

  5. Cut into 16 equal brownies.


Makes 16. Each brownie = 1P, 1C, 1F
